Cole Slaw – For Your Picnic or Barbecue

Cole SlawCole Slaw is great for a picnic or an outdoor barbecue. Too often, though, it is made with mayo, making it rather delicate and needing to be refrigerated. I have created this recipe to solve that problem. Here’s my cole slaw recipe without the mayo. It’s still a good idea to keep it cold, but it’s not as delicate as cole slaw with mayo!

Super easy to make, too! Only takes 20 minutes or so to put it together. But give it at least an hour in the fridge so all those flavors can meld together!

Cole Slaw

Course Salad
Prep Time 20 minutes
Total Time 1 hour 20 minutes

Ingredients

For the Dressing

  • 1/2 cup apple cider vinegar
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 1/2 tsp sea salt
  • 1 Tbsp whole seed mustard or 1 tsp dry mustard
  • 1 tsp celery seed

For the Slaw

  • 1 small cabbage shredded (about 1 - 1.5 pounds)
  • 1/2 cup chopped chives
  • 1 bunch green onions sliced
  • 2 carrots grated
  • 1 apple grated
  • 1/2 cup cheese, your choice grated

Instructions

For the Dressing

  • Combine all ingredients and mix well.

For the Slaw

  • Combine all cabbage, chives, onions, carrots, apple & cheese.
  • Add dressing and mix well.
  • Refrigerate at least 1 hour before serving.
