Cole Slaw is great for a picnic or an outdoor barbecue. Too often, though, it is made with mayo, making it rather delicate and needing to be refrigerated. I have created this recipe to solve that problem. Here’s my cole slaw recipe without the mayo. It’s still a good idea to keep it cold, but it’s not as delicate as cole slaw with mayo!
Cole Slaw
Ingredients
For the Dressing
- 1/2 cup apple cider vinegar 1/4 cup honey
- 1/4 cup olive oil
- 1/2 tsp sea salt
- 1 Tbsp whole seed mustard or 1 tsp dry mustard 1 tsp celery seed
For the Slaw
- 1 small cabbage shredded (about 1 - 1.5 pounds) 1/2 cup chopped chives
- 1 bunch green onions sliced
- 2 carrots grated
- 1 apple grated
- 1 ounce feta cheese diced

Combine all ingredients and mix well.
For the Slaw

Combine all ingredients.

Add dressing and mix well.

Refrigerate for 1 hour before serving.
