Today, the fourth of July, is Independence Day in the United States. It is a holiday to commemorate our adoption of the Declaration of Independence on July 4th, 1776. It was a declaration of the thirteen original American colonies as a new nation, the United States of America, no longer part of the British Empire.
I plan to take time today to reflect on the freedoms that we have in this country. And to be thankful for those freedoms.

I also will likely plan a special meal, whether we take it on a picnic or not. I have a couple of recipes to choose from:
Sweet Potato Salad is always a hit. It’s a fun and delicious twist on your traditional potato salad. It has a bit of a spicy side and includes no mayo!
Cole slaw is another great picnic dish. Especially my version, made without mayo!
Which one will you make? Or you could make them both! I’m leaning towards making the cole slaw.
